Steaks are cut 1½ inches thick or more. Roasts run 3–4 pounds. Ground beef is a mix of round, chuck, and sirloin in one-pound packs. Patties are a third of a pound, packed by the pound.
Half carcasses are available when the harvest calendar allows. The farm’s 2022 MeatSuite listing put halves at $5.75 per pound hanging weight with basic processing included. Call for this year’s number and what is on hand.

Why dry aging matters on grass-fed beef
Grass-finished beef is leaner than feedlot beef. Dry aging gives natural enzymes time to tenderize the meat and concentrate the flavor. After that it is sealed and frozen hard so it stays that way until it hits your pan.
There is no grain finish. There never has been.
